My family was invited to a Memorial Day b-b-que and it was there that I had the pleasure of eating one of the best salads I’ve ever tasted. And I’m totally not exagerating- it was that good!
When I asked my friend to email me the recipe she emailed me back an ingredient list. No proper measurements- just ingredients. Which, since I don’t fancy myself a real cook, was perfect for me.
Here’s what you need:
Extra Virgin Olive Oil
Tomato (I actually forgot to buy a tomato, but she did have that on her ingredient list. It’s still good without it.)
Pepper (not pictured)
I ended up using 3 avocados for this batch, about 1/4 of the onion and 1/2 of the feta. I drizzled the salald with some olive oil and several shakes of salt.
For the other cooking novices out there I’ll give you a tip. Buy ripe avocados. This is probably only the third time in my life that I’ve ever bought avocados so I had no idea what I was looking for. The ones in that picture weren’t ripe and were hard as rocks. I ran back to the store and grabbed 3 more (they’re firm, but have a little bit of give to them) and they were perfect. Easy to cut and scoop out.
This is the end result. With 3 avocados it’s a pretty small batch. In other words lunch. This is a super easy and delicious salad.
