Green Bean Salad

Shopping List:

  • 1/4 cup Olive Oil
  • 3 Tablespoons Lemon Juice
  • A pound of Fresh Green Beans
  • 3 Tablespoons Balsamic Vinegar
  • 1/4 teaspoon Salt
  • Cherry or Grape Tomatoes, halved
  • 1/4 teaspoon Garlic Powder
  • Feta Cheese
  • 1/8 teaspoon pepper
  • 4-5 strips Bacon, cooked and crumbled

Instructions:

  • First, in a large pot, bring salted water to a boil. Then, cook the green beans for 5-10 minutes, until tender.
  • Immediately drain the green beans, and put them in a bowl of ice water for a few minutes, to stop the cooking.
  • Next, drain the beans again, and then pat dry.
  • Toss the beans, in a bowl, with the tomatoes.
  • Then, in a separate bowl, whisk together the olive oil, lemon juice, vinegar, salt, garlic powder, and pepper.
  • Pour the mixture over the green beans. Cover the bowl, and chill for at least 1 hour before you serve.
  • Add the feta cheese and bacon right before serving.
