One pan meals, like this delicious sausage sheet pan dinner, are one of my biggest secrets, when it comes to making my family healthy, homemade dinners during the week!

You can’t beat the combination of savory, juicy sausage, and earthy vegetables, like potato, peppers, yellow squash, and zucchini! With all these fresh vegetables, this is one of my favorite recipes to make after a trip to the farmers market!

Kids will love to help prepare this dish, spreading the sausages and vegetables on the cookie sheet before you bake them!

I am forever looking for a quick and easy dinner option on busy nights, but I also want to serve my family a healthy, homemade meal.

One pan meals have majorly cut down on the amount of takeout that my family eats! 

It doesn’t get much easier than chopping all of the ingredients up, and then combining them in one pan! It also means less dishes, so win-win!

This easy sausage sheet pan dinner is made from wholesome ingredients, like sausage, yellow squash, zucchini, potatoes, peppers, garlic, and seasonings.

Ingredients For This Delicious kielbasa veggie sheet pan dinner

  • 1 pound (16 oz) sausage
  • 5-6 cups vegetables – any you like are fine, we used small potatoes, tri-colored bell peppers, zucchini, yellow squash
  • 2-3 tablespoons olive oil
  • 2 cloves garlic, minced 
  • 1 ½ teaspoons dried parsley
  • 1 teaspoon dried onions
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano 
  • ½ teaspoon black pepper

Step 1

Preheat oven to 400 degrees F.

Step 2

Spray a large sheet with non-stick cooking spray or line with parchment paper.

There are plenty of yummy gluten free, plant-based (meatless) sausage options, but my favorite is Beyond Sausage. The taste and texture are so spot on that you won’t believe it’s not real sausage! 

You can also opt to just eliminate a meat option and roast the veggies, too!

You can also add rice or gnocchi to make a sheet pan gnocchi to make this sheet pan dinner extra hearty.
