It doesn’t get much easier than chopping all of the ingredients up, and then combining them in one pan! It also means less dishes, so win-win!
This Sausage Sheet Pan Dinner:

- Prep Time: 15 minutes
- Cook Time: 20 minutes
Ingredients For This Delicious kielbasa veggie sheet pan dinner
- 1 pound (16 oz) sausage
- 5-6 cups vegetables – any you like are fine, we used small potatoes, tri-colored bell peppers, zucchini, yellow squash
- 2-3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 ½ teaspoons dried parsley
- 1 teaspoon dried onions
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon black pepper

Step 1
Preheat oven to 400 degrees F.
Step 2
Spray a large sheet with non-stick cooking spray or line with parchment paper.
Step 3
Clean and cut the vegetables and place in a large bowl.
Step 4
Drizzle with olive oil and toss to coat.
Step 5
Season with spices.
Step 6
Add vegetables to baking sheet.
Step 7
Slice sausage into 1 inch rounds, add to baking sheet.
Step 8
Bake for 20-25 minutes, stirring after 10-12 minutes, cook until vegetables are tender.

There are plenty of yummy gluten free, plant-based (meatless) sausage options, but my favorite is Beyond Sausage. The taste and texture are so spot on that you won’t believe it’s not real sausage!
You can also opt to just eliminate a meat option and roast the veggies, too!
