- 1 tablespoon Olive Oil
- 4 Chicken Breasts, boneless
- Salt
- Black Pepper
- 1 tablespoon Italian Seasoning
- 3 cloves Garlic, minced
- 2 tablespoons Balsamic Vinegar
- 16 oz. Crushed Tomatoes
- 1 tablespoons Basil, chopped – or 1 tsp. dried basil
- 4 slices Mozzarella Cheese
- Parsley, chopped

Step 1
If the chicken breasts are thick, flatten them slightly with a meat mallet. It will help them to cook more quickly and evenly.
Step 2
Season one side of the chicken with salt, pepper, and half of the Italian seasoning.
Step 3
In a large pan, heat up olive oil and add the chicken, seasoned side down, and cook for 8-10 minutes. (Put a lid on while cooking so the meat doesn’t cook dry.)
Step 4
Season another side of chicken with salt, pepper, and remaining Italian Seasoning while the first side is cooking.
Step 5
Flip the chicken and cook for another 8-10 minutes depending on the size of the chicken. Chicken is done when the internal temperature is 170°. Remove the chicken and set it aside.
Step 6
In the same pan, cook the garlic for about 30 seconds then add the balsamic vinegar, crushed tomatoes, and fresh basil. Mix until well incorporated and cook for about 3 minutes.
Step 7
Add the chicken back to the pan on top of the sauce.
Step 8
Top each chicken breast with a slice of Mozzarella cheese and cover with a lid for about 1 minute until the cheese is melted.

Step 9
Add some freshly chopped parsley and serve!
