Whenever I have a ton of apples that need to be used up, I usually opt for a classic, like apple pie, or an apple crumble, but this time I was craving a muffin version of a spicy apple treat!

These apple cinnamon muffins disappeared almost immediately. They are so tender and flavorful! I love the different textures. The fluffy sweet muffins, the cooked apples, cinnamon flavors. So good, great for the fall season due to the warm spices. But this apple muffin recipe is perfect really year round.
Easy Apple Cinnamon Muffin Recipe
I crave fall baked goods and dishes all throughout the year! Apples are fairly easy to get year-round, so they are the perfect fruit to bake with!
These easy apple cinnamon muffins are great for meal prepping!
Bake a double batch, let them cool to room temperature, and then package them in an airtight freezer container (or use freezer bags).
Now you have an easy breakfast or snack that can quickly be reheated when you are on-the-go!

Ingredients – Apple Cinnamon Muffin Recipe
All you need for this recipe is simple ingredients to enjoy the cinnamon apple flavor of this warm muffin recipe.
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup oil, vegetable or canola
- 1 egg, lightly beaten
- 1/3 cup milk
- 3 tablespoons grated apple, granny smith is best
- ¼ teaspoon ground cinnamon

STEP 1
Preheat oven to 400 degrees F.
STEP 2
Place liner in muffin tin.

STEP 3
Whisk together dry ingredients.

STEP 4
Pour oil into a 1 cup glass measuring cup.

STEP 5
Beat egg and add to oil.

STEP 6
Fill measuring cup to the 1 cup mark with milk.

STEP 7
Beat until well combined.
STEP 8
Add wet ingredients to dry ingredients and stir until well combined, but don’t over mix.

STEP 9
Stir in apples and cinnamon.

STEP 10
Divide batter into muffin tin, fill ? full

Bake at 400 degrees F for 15-20 or until a toothpick inserted in the center comes out clean.

Notes:
If you decide not to put the muffin batter into muffin cups you will still have moist muffins, but the sides will brown. Regardless, these are still the best apple muffins!
I sometimes put a little cooking spray in the muffin cups to keep them from sticking too much. If you find the first time you make them if they’re sticking to the paper you can do a very light spray. Too much will leave you with greasy muffin bottoms.
Don’t worry if you don’t have a firm apple to use. Soft apples (not rotten) are perfect for this recipe and will help eliminate waste. The best way to use extra apples in my opinion.
How To Make Gluten Free Apple Cinnamon Muffins
If you have a gluten sensitivity, Celiac Disease, or you are allergic to gluten, it is so easy to convert this to a gluten free apple cinnamon muffin recipe!
All you need to do is swap out the regular all-purpose flour for gluten free all-purpose flour.
As always, double check all of your other packaged ingredients to make sure that they are all wheat and gluten free.
If you are cooking for someone who cannot have gluten, be very careful, and do not bake these muffins around anything that has gluten in it, so that you can avoid cross-contamination.
