Using Pancake Mix to Make Homemade Pancakes
I still can’t get over how simple it is to make my own homemade pancake mix!
It makes me feel better, knowing that there aren’t any preservatives or added fillers.
Makes: 8-10 pancakes
Prep Time: 5 min

Add your homemade pancake mix to large measuring cup or mixing bowl. You may have made it ahead of time so you can just pour it into a large bowl or you can make it as part of the pancake mix recipe.

Next, add wet ingredients and whisk until well combined.
Heat griddle and spray with cooking spray.

Then, scoop pancake batter onto hot griddle and cook 4-5 minutes or until golden brown.
Flip and cook on other side 2-3 minutes or until golden brown.
Serve immediately with butter, syrup or fruit.
Pancake Mix Storage
Store pancake mix in pantry for up to 1 month.

How to Make Vegan Pancakes
If you are on a vegan diet, or are cooking for someone who is, no worries! This recipe can be tailored to be egg-free and dairy-free, too!
Replace the eggs with a mixture of 1/4 of unsweetened applesauce and 1/2 teaspoon of baking powder. This constitutes 1 “egg”. You can also make an egg replacement out of flaxseed meal, by mixing 1 tablespoon of ground flaxseed (flaxseed meal), wit three tablespoons of water. Then, let it sit in your refrigerator to thicken, for 15-30 minutes before using it.
Replace milk with your favorite non-dairy milk, like almond milk, coconut milk, soy milk, oat milk, or hemp milk. I have also made this recipe with water instead of milk, and still wound up with really fluffy pancakes!

How to Make Gluten Free Pancakes from Scratch
This is the easiest substitution you will find!
Use a gluten free all-purpose flour.
I prefer King Arthur Gluten Free Flour, but there are many good ones to choose from!
Make sure your baking powder is gluten free, too.
