  • 2 cups Frozen Corn, thawed
  • 1 Jalapeno Pepper, seeded and chopped
  • 2 tablespoons Cilantro, chopped (optional)
  • 2 tablespoons Red Onion, chopped
  • 2 teaspoons Olive Oil
  • 2 tablespoons Fresh Lime Juice
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Salt

Recipe Directions:

Stir all the ingredients together and it’s ready to serve!

Step 1: In a pot with salted, boiling water, cook the corn until tender (about 2-3 minutes) drain and add to a mixing bowl

Step 2: Combine the corn, jalapeno, cilantro (optional), red onion, olive oil lime juice, sugar, and salt. Stir in a large bowl until mixed well.

 

Serve with corn tortilla chips.

Tips for making this easy dip recipe:

  • Cilantro is one of those herbs that people seem to either love or hate. (Here’s why some people really hate cilantro!) The good thing about this recipe is that it is delicious even without it. You’ll notice in the pictures that there isn’t cilantro in it. That’s because, you guessed it – It’s not a favorite in our house!;)
  • Feel free to vary this recipe with other veggies. Red pepper would add even more color and some people like it with avocado as well.
