This tex-mex style Chili Tortilla Bake is one of those super simple easy casserole recipes– and made even easier using canned chili. You can have this layered and baking in the oven in just a few minutes.

It’s a perfect cold weather dinner idea and you can even use leftover chili if you’d like.

How to Make Chili Tortilla Bake

Ingredients you’ll need:

Shredded cheese, bowl of black beans, bowl of chopped onions, bowl of chili, and a pile of corn tortillas sitting on a marble countertop.
This tex mex casserole just requires a few basic ingredients. You can use your favorite canned chili, or leftover homemade chili for this recipe.

Step 1: Preheat the oven and prepare a casserole dish.

Preheat the oven to 350 F. Spray a 9×13 inch casserole dish with cooking spray and set near your ingredients.

Step 2: Assemble and prep your ingredients.

Lay all the ingredients out near your prepared casserole dish so they can be layered quickly into the pan.

Step 3: Layer ingredients into the prepared casserole dish.

Layer the Chili Tortilla Bake ingredients the following way:

  • Layer 1 – 6 corn tortillas
  • Layer 2 – 1/3 of the chopped onion
  • Layer 3 – 1/3 of the cheese
  • Layer 4 – 1/3 of the cilantro (optional)

Now top with 6 more corn tortillas. 

Top with another 1/3 of the onion, followed by HALF the can of chili, the whole can of black beans, another 1/3 of cilantro, and lastly another 1/3 of cheese.

Add more corn tortillas, the last of the onions and then the other half of the can of chili.  Finally, top with the last of the cheese.

Step 4: Bake

Cover with foil, and bake until warmed through and the cheese is bubbly – about 30-45 minutes.

Other Tips for this Chili Tortilla Bake Recipe:

  • Use pre-shredded cheese for an even quicker recipe prep time.
  • Substitute flour tortillas for the corn tortillas for a slightly different flavor and texture.
  • Some people like to fry the corn tortillas in oil before layering into the casserole.
  • Assemble this casserole and freeze ahead to have on hand for a busy day (when you don’t want to cook!).
  • This recipe is a favorite way to use up leftover corn tortillas. You may even want to rip the tortillas before you layer them for an easier way to cut it when it’s baked (similar to this method for another mexican casserole dish.)

  • 1 medium onion, chopped
  • 1 bunch cilantro, chopped (optional)
  • 2 pounds cheese, shredded
  • 1 14-oz can black beans, rinsed and drained
  • 1 20-oz can favorite chili
