You can buy Rotel in cans at your grocery store in the canned tomato aisle. Rotel is a very common ingredient here in Texas and is described as:

Rotel Cheese Dip Recipe Ingredients

Rotel dip is made out of 4 simple ingredients that you most likely already have in your fridge and pantry. This makes it he perfect last minute Game Day recipe for the big game.
- 1 pound lean ground beef
- 1 (10 oz) can Rotel Tomatoes & Green chilies, Original, undrained
- 1 (16 oz) package Velveeta cheese, Cubed
- 1 tablespoon taco seasoning

HOW TO MAKE ROTEL DIP
I love slow cooker recipes, like this Rotel dip recipe–it’s so easy! Once you have browned the beef, just throw everything into the crockpot, and let it simmer away during a party or game on low heat. You can also make this recipe ahead of time.
Step 1 – Rotel Dip

Our only stove top step: In a large skillet over a medium-high heat brown ground beef.
Drain off excess fat from the browned ground beef.
Step 2 – Rotel Dip

Cut cheese into 1 inch cubes. Your cubed Velveeta will met quicker in your mini crockpot or regular size crockpot depending on how much you’re making.
Step 3 – Rotel Dip

Add cooked ground beef and cheese to crockpot.
Step 4 – Rotel Dip

Sprinkle on taco seasoning.
Step 5 – Rotel Dip

Pour Rotel tomatoes over it and stir to combine.
Step 6 – Rotel Dip

Cover and cook on high for 2 hours, or until cheese is hot and melted.
Step 7 – Rotel Dip

Turn down the crockpot to warm setting and serve the cheesy dip.
Notes:
Can’t eat a lot of red meat? That’s okay, you can use ground turkey! There will still be tons of flavor!
A pound of ground beef a little too bland for you? Use spicy sausage, specifically spicy ground sausage and make make it a tasty rotel sausage dip.
How Long Does Rotel Dip Last in the Fridge?
If you decide to use meat in your Rotel dip, it can last up to three days refrigerated in an airtight container. If you make it without meat, it can last for four days.
Although, I wouldn’t refrigerate anything that has been sitting out with people dipping into it. Toss that to be safe!

Rotel Dip FAQs
You can make vegan Rotel dip if you eliminate the meat and standard cheese. Instead, opt for a vegan beef crumble substitute, like Beyond Meat’s meatless “beef” crumble. There isn’t a vegan Velveeta option, but there are tons of recipes out there to make your own out of nuts.
For a vegetarian Rotel dip, just omit the meat. I have substituted black beans instead of meat with tasty results.
Rotel is already gluten free–it is just cheese, meat, and tomatoes. I always double check the labels on any processed ingredients, though, to check for cross contamination.
If you are making gluten free Rotel, be careful when it comes to what you choose to dip in your Rotel:
– Fresh veggies, gluten free corn chips, and gluten free crackers are great, safe choices!
– Make sure you have a separate bowl of dip and items to dip, if you are hosting and have someone with gluten allergies attending, because even a tiny crumb can make them ill. You can even put a cute little sign or label nearby stating that it is gluten free, to keep everyone aware!
Yes, you can reheat Rotel dip by placing it back into a slow cooker until warm or by heating in the microwave. If you microwave it at 100%, then remove and stir every minute or so until hot – the amount of time needed will be determined by the amount of Rotel dip leftovers you have!
