Easy Corn Salsa Ingredients

  • 2 cups frozen corn, thawed
  • 1 jalapeno pepper, seeded and chopped
  • 2 tablespoons cilantro, chopped (optional)
  • 2 tablespoons red onion, chopped
  • 2 teaspoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon kosher salt

Step 1

In a pot with salted boiling water, cook the corn until tender (about 2-3 minutes) drain, and add to a mixing bowl.

Cilantro is one of those herbs that people seem to either love or hate. (Here’s why some people really hate cilantro!) The good thing about this recipe is that it is delicious even without it. You’ll notice in the pictures that there isn’t cilantro in it. That’s because you guessed it – It’s not a favorite in our house!

Feel free to vary this recipe with other veggies. Red bell pepper would add even more color and a red pepper is sweet. And some people like it with avocado as well. I like to add black beans sometimes to add a protein element. Some diced juicy tomatoes also goes well.

You can also make this with an ear of corn. Using a cutting board and a sharp knife, cut the raw sweet corn off the cob. The summer corn and other fresh vegetables bring tons of fresh flavors to your table!

Also, if you char the corn, it’ll give you a nice charred flavor. But don’t worry it won’t be bitter because the sweetness of the corn will cut through it.

If you have leftovers you’ll want to store them in an air tight container. Or a small bowl that is covered with plastic wrap, a lid, or tin foil. However, it’ll last longer in an airtight container. We want the fresh sweet corn to stay fresh. It is still the best corn salsa, even the next day.

  • 2 tablespoons cilantro, chopped (optional)
  • 2 tablespoons red onion, chopped
  • 2 teaspoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt

Instructions

    1. Cook the corn in a pot of boiling water with salt.
    2. Drain the excess water from the corn and put it in a mixing bowl.
    3. Mix corn, jalapeno, cilantro, red onion, olive oil, lime juice, sugar, and salt. Stir until mixed well.
    4. Serve with corn tortilla chips!

  1. I love corn salsa! I don’t think you even need to cook the corn, just let it thaw most of the way- which it will do in the fridge if you let it marinade for a while. Thanks for deliciousness!! ( I like some black beans in there, too! Have you tried the canned seasoned ones?)
