  • 2 cups frozen corn, thawed
  • 1 jalapeno pepper, seeded and chopped
  • 2 tablespoons cilantro, chopped (optional)
  • 2 tablespoons red onion, chopped
  • 2 teaspoons olive oil
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon sugar
  • 1/2 teaspoon kosher salt

Step 1

In a pot with salted boiling water, cook the corn until tender (about 2-3 minutes) drain, and add to a mixing bowl.

Also, if you char the corn, it’ll give you a nice charred flavor. But don’t worry it won’t be bitter because the sweetness of the corn will cut through it.

  1. I love corn salsa! I don’t think you even need to cook the corn, just let it thaw most of the way- which it will do in the fridge if you let it marinade for a while. Thanks for deliciousness!! ( I like some black beans in there, too! Have you tried the canned seasoned ones?)
