These chicken fajitas are full of flavor. You get smokey from the cumin and bold from the chili powder, similar to taco seasoning! There’s no real kick even though there are tomatoes with green chiles in there, too. I like to add spicy toppings to take it up a notch. This way, since my kids like to keep theirs mild, we can all enjoy this meal.

Ingredients You’ll Need to Make Crockpot Chicken Fajitas
- chicken breast – Boneless and skinless is best and they don’t have to be cut before cooking. You may also use chicken thighs if you prefer.
- chili powder
- ground cumin
- salt
- black pepper
- dried oregano
- garlic – Minced
- yellow onion – Slice into very thin strips.
- red bell pepper – Cut into strips.
- green bell pepper – Cut into strips.
- yellow bell pepper – Cut into strips.
- diced tomatoes with green chiles – No need to drain these! They come in a variety of flavors and heat levels so just choose your favorite!
Instructions for Slow Cooker Fajitas
Step 1
Add your chicken breasts to the bottom of the slow cooker.
Step 2
Combine your spices in a small bowl. Sprinkle over the chicken.
Step 3
Mince the garlic cloves and cut the peppers and onions. Add all of these to the slow cooker.
Step 4
Pour the can of tomatoes with chiles over the seasoned chicken and veggies.
Step 5
Cover the slow cooker and cook on high for 2-3 hours or on low for 4-6 hours.
Tip: Use a thermometer and make sure the chicken is cooked to an internal temperature of 165 degrees F.
Step 6
Remove the cooked chicken from the pot and slice into strips.
Step 7
Remove the veggies and combine them with the sliced chicken.
Step 8
Serve on tortillas with your favorite toppings!

Ingredients
- 2 pounds boneless, skinless chicken breast
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried oregano
- 3 cloves garlic, minced
- 1 medium yellow onion, thinly sliced
- 1 large red bell pepper, cut into thin strips
- 1 large green bell pepper, cut into thin strips
- 1 large yellow bell pepper, cut into thin strips
- 1 can (15 oz) diced tomatoes with green chiles, undrained
