- Boneless skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- Ground cumin
- Dried oregano
- Ground coriander
- Cayenne pepper

- Diced green chiles – You can choose mild, medium, or hot depending on your preference.
- White beans, drained and rinsed
- Corn
- Chicken broth or stock
- Cream cheese
- Heavy cream

Step 1
Add your chicken breasts to the crockpot and cover with salt, pepper, and all of your other seasonings (cumin, oregano, coriander, and cayenne).
Tip: Leave the chicken breasts whole, they will be shredded later after they cook.

Top your seasoned chicken with your veggies (garlic, onion, corn, chiles) and white beans, then pour all of the chicken broth over the top.

Cover and cook on low for 5-6 hours or high for 2-3 hours.
Tip: There’s no need to stir during this time. When the chicken is fully cooked to an internal temp of 165 degrees F, that’s how you know it’s done.
Step 4
Remove your cooked chicken breast and shred it with forks on a cutting board. This should be fairly easy since the chicken will be very tender.
Step 5
Return the chicken to the crockpot and stir in the cream cheese and heavy cream. Cover and cook for an additional 15 minutes.
Tip: You’ll know it’s ready once the cream cheese is melted and the chili is thick and creamy.

- Salt, to taste

- ½ teaspoon dried oregano
- ½ teaspoon ground coriander
- ½ teaspoon cayenne pepper
- 1 small yellow onion, chopped
- 2 cloves of garlic, minced
- 1 can (4 oz) diced green chilies
- 2 (14oz) cans white beans, drained and rinsed
- 1 ¼ cup frozen or fresh corn
- 4 cups (32 oz container) chicken broth or stock
- 4 oz cream cheese, cut into cubes
- ½ cup heavy cream

- Monterey Jack Cheese, shredded
- Tortilla chips or strips
- Avocado
- Jalapeno pepper

Instructions
- Add chicken breasts to crockpot, season with salt, pepper and seasonings

If you have any leftover chili, you can store it in an airtight container in your refrigerator for up to 4 days. It’s super easy to reheat. Use a microwave-safe bowl and cover it with a paper towel. Microwave on high for about 2-3 minutes, stirring halfway.
