HOW TO MAKE INSTANT POT CHICKEN AND RICE

It can be a challenge to find something that everyone agrees on for dinner, but I have found that you can’t go wrong with a creamy chicken and rice dinner! This one always hits the spot.
This is one of my favorite instant pot recipes for kids.
THIS INSTANT POT CHICKEN AND RICE RECIPE

- Prep Time: 5 min
- Cook Time: 20 min
Ingredients Needed For This Delicious Instant Pot Chicken And Rice Recipe
- ½ cup white onion, chopped
- 1 cup carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 2 tablespoons olive oil – canola or vegetable will work as well
- 1 ½ cups uncooked long grain rice, rinsed well
- 2 tablespoons unsalted butter
- 1 cup mushrooms, sliced
- 3 cups of chicken broth
- 1 pound skinless boneless chicken breasts
- Salt and black pepper to taste
- 1 cup frozen peas, optional
- ¼ cup fresh parsley chopped, plus more for garnish if desired
- Parmesan cheese, optional for serving
How To Make This Yummy Instant Pot Chicken And Rice Recipe
Step 1
First, set instant pot to saute on high, add butter, oil, onion and carrots.
Step 2
Then, saute until soft and golden, stirring occasionally for about 4-5 minutes.
Step 3
Add minced garlic and oregano, stir and cook about 1 minute or until fragrant.
Step 4
Next, add salt and pepper to chicken, set aside.
Step 5
Rinse rice well, add to pot.
Step 6
Then, clean and slice mushrooms, add to pot.
Step 7
Pour chicken broth into pot covering rice and vegetables, add more broth if needed.
Step 8
Next, place chicken breasts on top of rice mixture.
Step 9
Cover and cook on manual high pressure for 10 minutes.
Step 10
When done, allow instant pot to naturally release pressure.
Step 11
Remove lid, remove chicken and shred into bite size pieces.
Step 12
Stir in ¼ cup chopped parsley, peas and chicken.
Step 13
Serve immediately with parmesan cheese and parsley if desired.
Notes:
- Don’t like white rice? Substitute with brown rice! Jasmine rice will also make it flavorful. Wild rice would also be great.
- Instant rice or Minute rice may get soggy or overcooked.
- Don’t have garlic? Just add garlic powder.
- Boost this easy chicken recipe by adding fresh green onions on top.
- Skinless chicken thighs will also work and will give more flavor. Make sure the chicken skin is off so your meal isn’t greasy.

As long as you check all of your ingredients, yes, it is!
The grain used in this recipe is rice, which is usually gluten free!
Double check that your chicken broth and all other processed ingredients are gluten free, though.
How To Store Your Leftover Instant Pot Chicken And Rice
Make sure your chicken and rice cools to room temperature before putting it into an airtight container. The chicken and rice can be put into the fridge and will stay good for 3 to 4 days.
Can You Freeze Your Instant Pot Chicken and Rice Leftovers?
Yes, you can. However, understand that the veggies and rice texture may be a little different once you freeze and thaw it. But it will still be tasty. Your instant pot chicken and rice will last about 2 months in the freezer.
