  • 1 clove Garlic, minced
  • 2 Tomatoes chopped

  • 1/3 cup fresh Lime Juice
  • A teaspoon of Salt
  • 1/4 cup Olive Oil
  • A Red Bell Pepper, chopped
  • 1/8 teaspoon Ground Cayenne Pepper
  • An Avocado (optional)
  • 1/2 cup chopped fresh Cilantro (optional)

Ingredients Needed To Make Mexican Stuffed Peppers:

  • 1 package prepared Spanish Rice
  • A Tomato, diced
  • 1 pound Ground Beef, browned
  • Red or Green Bell Peppers
  • 1 1/2 cups Mexican Cheese, shredded
  • Fresh Cilantro
  • Salt and Pepper, to taste

How To Make Mexican Stuffed Peppers:

  1. First, preheat the oven to 350°.
  2. Next, prepare the peppers by slicing off the top and removing any seeds, or ribs, inside.
  3. Place the peppers in a baking pan, fill the bottom with water. Then, place in the oven for 10-15 minutes, until soft.
  4. Next, follow the directions for the pre-made Spanish Rice. Cooke, and then set aside.
  5. In a saucepan, brown the ground beef. Drain the fat and add the diced tomatoes. Then, season with salt and pepper.
  6. Then, combine the meat, tomatoes, and the Spanish Rice.
  7. Fill the peppers with the meat/rice mixture.
  8. Sprinkle the top with cheese.Then, place back into the oven for 10-15 minutes, until the cheese is melted.
  9. Serve warm.
