Preheat the oven to 400 degrees.

Pour the coconut out onto a cookie sheet, cook in the oven until toasted and browned.

Using an electric mixer, cream the butter and sugar together. Hand fold in the flour. The mixture will be crumbly but comes together.

Press the cookie mixture into a greased 8×8 pan. Bake for 20 mins or until set up and firm.

  • 7 oz caramel sundae topping
  • Chocolate sauce or fudge for drizzling
