As a busy mom of many, I love easy recipes that do not require tons of prep work from me. That said, I do not want to compromise quality or nutrition for my family.
These glazed dill carrots take about five minutes of prep time from you. You dump them in, walk away and come back just a few hours later to a delicious side dish.
These carrots go perfectly with a week night dinner or are amazing for a family holiday get together like Easter!
Let me show you how simple these are to make.
- 2 pound bag of fresh, raw baby carrots (peeled)
- 1/2 c chicken broth
- 1 T maple syrup
- 1 t olive oil
- 2 T dill weed
- 1 T butter
Place the carrots in the slow cooker. Remember, your slow cooker works best when 2/3 of the way full, so using a 4 qt slow cooker would be best unless you are doubling this recipe.

Evenly pour the broth and olive oil over the carrots.
Pop the lid on it and cook on low for 3 hours.
Remember, do not take the lid off during the cook time. Every time you do this it adds 20 minutes on to the cook time.
After the carrots have cooked for 3 hours, take the lid off and sprinkle with the dill weed and add in the butter.
Stir with a spoon until carrots are well coated.
Transfer the carrots to a serving dish, if you choose.
Enjoy this as an amazing side dish. These will go perfectly with just about any protein as your main dish.
