If you haven’t made it to Costco lately, you are missing out.

One of the popular items Costco has brought back the last few years is their mini carrot cakes that are covered in cream cheese frosting!
Now, it’s important to know that while these do say “mini” they are not mini at all. In fact, they are practically Costco muffin size!
These tasty Spring treats are made with a classic carrot cake recipe, including walnuts and raisins, and topped with cream cheese icing.
The mini cake is then decorated with a cute frosted carrot on top, making it the perfect treat for Easter.
