There are many ways to cook butternut squash.
My favorite way to prepare butternut squash (and other squashes) is to simply cut the squash in half, scoop out the seeds, wrap in foil, and bake in pan on 250 F for 3-4 hours.
Other people omit wrapping in foil, and simply place in the microwave to cook for 10-20 minutes (cooking time depends on your appliance).
Either way, it tastes great and you can’t go wrong.
After the squash is cooked thoroughly, simply scoop out the flesh from the skin. I served this Creamy Butternut Squash Pasta Sauce over frozen pre-made cheese-stuffed tortellini pasta.
Creamy Butternut Squash Pasta Sauce
- 4 cups cooked butternut squash (choose a 2.5-3 pound butternut squash)
- 1 white onion, chopped
- 5 cloves garlic, minced
- 1/2 teaspoon ground black pepper
- 1 Tablespoon prepared mustard
- 1 Tablespoon chopped fresh basil
- 2 cups fresh cream (you can use sour cream or heavy whipping cream instead)
- 2 cups shredded mozzarella cheese
- 1 Tablespoon olive oil
1.) In a large skillet, heat olive oil over medium heat.
2.) Sauté onions and garlic for 2-3 minutes, or just until onions are translucent and begin to turn golden.
3.) Add squash, black pepper, prepared mustard, and fresh basil.
4.) Stir to combine.
5.) Add fresh cream and stir.
6.) Remove from heat, and transfer to a medium sized bowl.
7.) Using a stick blender, or a regular blender, blend sauce until it is creamy (a few small chunks are okay).
8.) You may have to add a little milk or cream if the sauce is too thick.
9.) While the sauce is still very warm add the cheese.
10.) Serve over your favorite pasta. My family loves this Creamy Butternut Squash Pasta Sauce recipe over cheese-stuffed tortellini pasta.
