Just be sure not to cook it to long or your crostini will be too hard. The perfect way to cook this recipe and other crostini recipes is to bake, broil, or grill it at a high heat. The edges should be brown, but the inside should be soft.

Garlic Herb and Tomato Crostini Recipe

This is what you need to make the Garlic Herb and Tomato Crostini Recipe:

  • Baguette Bread, sliced
  • 2 tablespoons butter
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 clove garlic, minced
  • 6 slices of fresh mozzarella
  • 6 cherry tomatoes, sliced
  • Olive Oil
  • Salt & pepper

Directions: 

Preheat the oven to broil on low setting.

Add the butter, garlic, fresh herbs, and a pinch of salt & pepper to a microwave safe dish. Heat for 30 seconds or until butter is melted. Let it stand for 5 minutes to infuse the flavors into the butter.

Place the bread slices on a sheet pan or in a cast iron skillet that has been drizzled with olive oil.

Brush with the melted garlic herb butter.

Top with slices of tomato and then the mozzarella.

Season with a pinch of salt & pepper.

Broil for about 5 minutes or until edges are golden brown and cheese is melted.

Serve as a side with dinner or as a light lunch/snack.
