Last week, I was putting together dinner for a friend who had a baby and realized that I had forgotten a salad or vegetable of any kind! After a quick search around the kitchen, the following ingredients appeared and voila! The dinner was complete. Best of all, it took a total of 5 minutes to prepare ¦not kidding!
5 minute Greek-ish style Salad
1 cup cucumbers, chopped (I like seedless English cucs)
1 cup teardrop or cherry tomatoes, chopped
1/2 cup feta cheese
balsamic dressing of your choice, to taste
salt and pepper to taste
Mix together all ingredients and store in an air-tight container. Allow to marinate for at least 1 hour before serving. The longer it marinates, the better!
