These sweet & tangy little cookies are perfect for a summer treat. They “crack” as they cool so they look pretty on a plate as well!
INGREDIENTS:
- 2 sticks butter, softened
- 3/4 cups sugar
- 1 1/4 cups powdered sweetened lemonade mix
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
WHAT TO DO:
Preheat the oven to 350 degrees.
In a large bowl, cream the butter, sugar, & 3/4 cup (NOT ALL!) of the lemonade mix until the mixture is fluffy. Beat in the vanilla, egg, & lemon extract.
In another bowl, sift together the flour & baking soda. Add the dry ingredients to the batter, & beat until combined well.
Place the remaining 1/2 cup of lemonade mix in a shallow bowl. Roll dough into 1-inch balls and roll them around in the powdered lemonade mix. Place on a greased cookie sheet, or use parchment paper on a cookie sheet. Bake until the edges just begin to turn brown, about 10 minutes.
Cool for 3 minutes on the baking sheet before removing them to cooling racks. Makes about 5 dozen cookies.

Oh my. Let’s try one more time. COOL FOR THREE MINUTES ON THE COOKIE SHEET BEFORE MOVING TO COOLING RACK. Goodness!
That should say “cool” for 3 minutes the coke sheet before moving them to a cooling .rack.to cool!
