Let’s make ice cream in a bag recipe
The science behind making ice cream is actually really neat.
Salt is added to the ice because salt lowers the freezing point of water, making the melted ice/salt colder than the original ice. This extra-cold ice/salt mixture surrounds the cream in the smaller bag and freezes the cream inside to create your ice cream treat.
There are actually two opposing chemical reactions happening at the same time. As you shake the bag back and forth, the ice/salt mixture in the larger bag (a solid) turns into a liquid (melted ice). When ice absorbs energy, it changes the phase of water from a solid to a liquid. The ice absorbs energy from the ice cream ingredients and also from your hands as you shake the bags. Conversely, the liquid ingredients inside (milk, cream) are turning into a solid (ice cream) as the molecules in the liquid slow down and eventually freeze in place.
The best thing about homemade ice cream is that you know the ingredients and process of how it’s done. It’s totally safe to eat and fun to make too!

Homemade Ice Cream in a Bag recipe ingredients
Here’s what you need to make Homemade Ice Cream in a Bag:
- 1 cup heavy whipping cream
- 2 tablespoons Imperial Sugar Extra Fine Granulated Sugar
- 1/2 teaspoon vanilla extract
- 3 cups ice
- 1/3 cup ice cream salt
- Quart size plastic zipper bag
- Gallon size plastic zipper bag

Directions to make this homemade ice cream recipe
Step 1
In the quart-size zipper bag, mix together the heavy whipping cream, sugar, and vanilla extract. Remove the excess air and zip closed.

Step 2
Place the ice in the gallon size zipper bag and add the salt.
Step 3
Put the small bag inside the large one and shake it, smashing and rolling the ingredients together, for 7-10 minutes.

Step 4
Once the ice cream has hardened inside the small bag, scoop it into a bowl or cone and enjoy with your favorite toppings!
