I made a promise to take better care of myself this year. That doesn’t necessarily mean skimping on foods that make me happy, it just means redefining what foods make me happy, and why. Most junk foods have healthier counterparts that you can substitute with, so you can still keep the yummy but also invest in your health, and feeling better. These No-Bake Chocolate Energy Balls are not only for breakfast! They also make a wonderful snack that will give you a pick-me-up during the afternoon slump! 2:30PM is my low point each day. No matter how healthy of a breakfast I eat, how much coffee and water I drink, or how well I slept the night before, I’m always exhausted by that point. It’s nice to have a healthy snack to help me through my day! Plus, they are sooooo easy to make! Perfect for the busy mom who doesn’t have a ton of time to food prep.    
No-Bake Chocolate Energy Balls

No-Bake Chocolate Energy Balls

Shopping List:
  • 1 cup Dry Oatmeal
  • 2/3 cup Unsweetened Coconut
  • 1/2 cup Peanut Butter
  • 1/2 cup Dark Chocolate Chips
  • 1/3 cup Honey
  • 1 teaspoon Vanilla
  • 1 tablespoon Cocoa Powder
Instructions:
  • Mix everything together in a mixing bowl, and put in the refrigerator for at least 30 minutes to bind together.
  • Shape the mixture into 1-inch balls, and set aside (expect the mixture to be a little sticky).
  • Serve with fruit, yogurt, or chocolate avocado pudding!
Also, if you aren’t a fan of chocolate, swap it out for something else! Experimenting with healthy recipes is fun, because you can be as adventurous and innovative as you want to be! Don’t feel tied down to every ingredient!
