Whip it up in the morning and by dinnertime you’ll have a whole house of delicious smells wafting in from the kitchen. It’s great for the family and company alike. Lemon, thyme, and chicken–the perfect trio of flavors!
Our Lemon & Thyme Slow Cooker Chicken makes enough for 6 servings. We used chicken thighs in our recipe, but feel free to substitute with 6 breasts or 10-12 drumsticks. You could even use one whole cut up chicken, if you prefer. For crispier skin (if you choose to leave it on as we did), just stick our slow cooker chicken under the broiler for a couple minutes.
Lemon & Thyme Slow Cooker Chicken
- 6 chicken thighs
- 1 lemon, cut into thin slices and then halved
- 1 lemon , cut into thin slices (for garnishing)
- 3 Tablespoons fresh thyme, chopped (reserve 1 T for garnish)
- 3 Tablespoons fresh parsley, chopped (reserve 1 T for garnish)
- 1 medium onion, halved and then cut into thin slices
- drizzle of olive oil
- 1/2 cup water
- salt and pepper, to taste
Season chicken thighs with salt and pepper. Place in slow cooker. Top with 2 Tablespoons thyme and parsley, the minced onion, and the lemon cut into thin slices and then halved. Add a drizzle of olive oil and 1/2 cup water. Cover slow cooker with lid. Cook for 4 hours on HIGH or 8 hours on LOW.
For serving, remove thighs from slow cooker and place on serving platter. Top with reserved parsley and thyme. Add lemon slices on top of thighs. Serve our slow cooker chicken with a vegetable, salad, and bread or rolls for a complete meal.
