Our easy lemon & thyme slow cooker chicken recipe makes enough for 6 servings. We used chicken thighs in our recipe, but feel free to substitute with 6 breasts or 10-12 drumsticks. You could even use one whole cut-up chicken if you prefer.
For crispier skin, if you choose to leave it on as we did, just stick our slow cooker chicken under the broiler for a couple minutes.

Lemon & Thyme Slow Cooker Chicken ingredients
Here’s what you’ll need to make this easy slow cooker recipe.
- 6 chicken thighs
- 1 lemon, cut into thin slices and then halved
- 1 lemon , cut into thin slices, for garnishing
- 3 Tablespoons fresh thyme, chopped, reserve 1 T for garnish
- 3 Tablespoons fresh parsley, chopped, reserve 1 T for garnish
- 1 medium onion, halved and then cut into thin slices
- drizzle of olive oil
- 1/2 cup water
- salt and pepper, to taste

Step 1
Season chicken thighs with salt and pepper then place them in the slow cooker.
Step 2
Top with 2 Tablespoons thyme and parsley, the minced onion, and the lemon cut into thin slices and then halved.
Step 3
Add a drizzle of olive oil and 1/2 cup water.
Step 4
Cover slow cooker with lid. Cook for 4 hours on HIGH or 8 hours on LOW.
