Breakfast foods are super easy to make and are fun at all times of the day.
We love picnics. This was a recent breakfast that we packed up for a brunch outdoors.
Waffle Sandwiches.
Making Memories!
Our Waffle recipe is half gluten. We are trying to cut back on our wheat, but at the same time, we love fluffy carbs! This was a great way to increase the protein without sacrificing flavor!
Half Gluten Waffle Ingredients
- 2 cups of flour
- 2 cups of ground Almond meal
- 2 and a half tablespoons of baking powder
- Couple dashes of salt
- 1 teaspoon of cinnamon
- 5 eggs – beaten
- 1 tablespoon of sugar
- 3/4 cup of oil
- 3 cups of almond milk.
- 3/4 cup of water
Mix all of the dry ingredients. Add the beaten eggs and the milk and water. Mix well. Let the batter sit for a couple of minuets as the waffle iron heats up. Pour cupfuls of the batter into the iron. Cook as you like.
To make a waffle sandwich
Smear cream cheese (or peanut butter, or yogurt, etc) over your waffles. Slice fruit and layer it over the waffle “bottom”. Viola. You have a sandwich that is perfect for any breakfast brunch. It’s great on-the-go and tastes marvelous – no syrup needed!
