We sure love picnics. Breakfast foods are super easy to make and are fun at all times of the day and this was a recent breakfast that we packed up for brunch outdoors. These waffle sandwiches turned our meal extra ordinary!

Our waffle recipe is half gluten. We are trying to cut back on our wheat, but at the same time, we love fluffy carbs! This is a great way to increase the protein without sacrificing the flavor!

easy waffle sandwich recipe
- 2 cups flour
- 2 cups ground almond meal
- 2 and a half tablespoons of baking powder
- Couple dashes of salt
- 1 teaspoon of cinnamon
- 5 eggs – beaten
- 1 tablespoon of sugar
- 3/4 cup of oil
- 3 cups almond milk
- 3/4 cup of water
directions to make easy waffle sandwiches
Step 1
Mix in all of the dry ingredients.
Step 2
Add the beaten eggs, milk and water. Mix them well.
Step 3
Let the batter sit for a couple of minutes as the waffle iron heats up.
Step 4
Pour cupfuls of the batter into the iron and cook as you like.
Step 5
Make a waffle sandwich by smearing cream cheese (peanut butter, or yogurt, etc) over your waffles.
Step 6
Slice the fruit and layer it over the waffle “bottom”. Viola! You have a sandwich that is perfect for any breakfast or brunch.
