My kids love granola bars and I love having them eat healthy breakfasts and snacks! These are great for those “on-the-run” mornings! The oatmeal makes them feel full, the dried fruit makes my fruit-loving little man happy and the flaxseed adds brain-friendly fats. These granola bars will keep for a week or so, but for longer shelf-life, freeze them!
2 cups rolled oats (grind 1 c up in the blender or food processor for more consistent texture)
1 cup whole wheat flour
1/3 cup brown sugar
1/2 cup wheat germ
1/2 teaspoon salt
1/2 cup vegetable/canola oil
1/2 cup honey and/or maple syrup
2 teaspoons vanilla
1 large egg, beaten
1/2 cup peanut butter (optional)
about 2 cups total: any combination of raisins, dried fruit (cherries and apricots are our favorite), pecans, chocolate chips, peanut butter chips, sunflower seeds, flaxseed…go crazy!!!
also optional: 1 tsp cinnamon and 1/2 tsp nutmeg
Mix everything together very well and spread in a greased 9×13 pan. Bake at 350 for just 15-18 minutes. Even though this doesn’t seem long enough, they’ll be chewy & perfect. Allow to cool as long as you can stand it before cutting into pieces. I always freeze half the pan right away so they’re fresh if it takes more than a few days to eat them.
