Start off Halloween morning with a healthy and fun Breakfast Sandwich Monster. It’s never more important for kids to start their day with a nutritious breakfast than on a day when they’ll spend the evening feasting on candy and holiday sweets, like Oreo Truffle Spiders. These egg and cheese sandwiches decorated with googly eyes and cheesy fangs would also be a fun dish to serve at a monster themed Halloween party.
I love to whip up a breakfast sandwich in the morning, and the other day I was eating one as I was putting the finishing touches on some Rice Krispie Treat Monsters. As I looked down at my plate, I realized my sandwich with is shredded orange cheese looked a bit like my sweet monster treat. I stopped what I was doing and grabbed some pretzels, mozzarella cheese, and olives and quickly turned my scrambled egg topped English muffin into a really cute monster. I knew as soon as my monster was complete that kids would love them for breakfast on Halloween or any day, really. I sure enjoyed eating mine.
Breakfast Sandwich Monster
Ingredients:
1 English Muffin, split
2 eggs, scrambled
3 tablespoons shredded cheddar cheese
optional, ham, bacon, or sausage patty
4 pretzel sticks
5 mozzarella cheese balls
6 large black olives
Instructions:
Top one half of the English muffin with a scrambled egg and meat, if using. Sprinkle on 1 1/2 tablespoons of shredded cheese.
Cut the tips off 4 of the olives and set the small round pieces on a mozzarella ball.
Insert a pretzel stick into each mozzarella stick.
Cut thin strips of olives for the mouths.
Cut the remaining mozzarella ball into thin slices, then cut out a few fangs.
Set two eyes on a plate. Set one scrambled egg and cheese topped English muffin over the ends of the pretzel sticks. Add an olive mouth and some cheese fangs.
Serve hot.
