How a Can of Fire Roasted Tomatoes Saved Dinner

Here's the scenario:  

Weekday night

Mom stuck in a 2 hour meeting (supposed to be 1 hour)

Hungry hubby and kid

 

Plan:

Quick pasta with 5 ingredient marinara sauce, roasted veggies and garlic toast

Here's how to make it happen

 

 5 Ingredient, 5 Minute Pasta Sauce

1, 15.5 oz can of fire roasted tomatoes (any kind will do-I like  Muir Glen)

2 cloves of garlic, minced

Italian seasoning, to taste

Freshly cracked black pepper, to taste

small handful of chopped fresh basil, if desired

 

In a small stock pot, mix tomatoes, garlic and seasonings. Heat to a gentle simmer and turn heat to low. Taste and adjust seasonings. Spoon over prepared pasta. Serves 3-4.

Add roasted brussel sprouts, green beans, broccoli and tomatoes as a side dish (or right into the pasta dish) along with garlic toast.

Kid-loved the sauce with his noo-noos. (noodles)

Dad-recently opposed to heavy jarred pasta sauces, this hit the spot for him as it was light, flavorful and just enough sauce to coat the pasta the way he likes it.

Mom-currently listing uses for this simple, healthy sauce including pizza, lasagna, baked potato, bruschetta, soup bases, chili and so on and so on and so on.  I could literally drink this-and just might do it someday soon. This is my new go-to pasta sauce!
