One Pot BBQ Chicken Pasta
There are so many great ideas for one pot meals!
When I came across this idea for a One Pot BBQ Chicken Pasta, I had to try it!
It’s usually a safe bet your kids like pasta. And there are so many great options, even for those who eat gluten-free meals. My daughter is gluten-free so we really try to give her alternatives to everything we make — including pasta!
This meal gives you a little of everything including meat, cheese, veggies and carbs! All our favorites!
One Pot BBQ Chicken Pasta
Ingredients:
- Roast Chicken, chunks cut from the breast (one cup)
- 4 slices Bacon, diced
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 cups Chicken Broth
- 1 can Diced Tomatoes
- 1/2 cup Milk
- Pinch Crushed Red Pepper
- 3 cups Rotini Pasta
- 1/2 cup Barbeque Sauce
- 1 1/2 cups Cheddar Cheese, shredded
- Salt & Pepper to taste
After you have prepped the chicken from the cooked roast chicken (I used about a cup of chicken), you will dice up the bacon and cook in your large saucepan until crispy.
Drain the fat and add the onions for about 3 minutes, then the garlic until both are cooked through. This takes about 5 minutes.
Then you are going to add the chicken, chicken broth, milk, tomatoes, pasta, a pinch of red pepper flakes and salt & pepper.
Mix this all together and bring to a boil. Once it boils, lower the heat, cover and simmer for about 15 minutes.
You will know it’s done when the pasta is cooked and the liquid has reduced to a sauce.
When the pasta is ready, mix in the barbeque sauce. I used my homemade version, Java Shoppe Homemade BBQ Sauce!
Add the cheddar cheese to the top until it melts.
Serve right from the pan!
