I was thrilled when Imperial Sugar introduced us to their holiday recipe collection. One of the recipes included are sweet and sour pumpkin gummies loaded with Vitamin C. They looked so yummy but we didn’t have all of the ingredients on hand – so this is our adaptation of their recipe.
LET’S MAKE candy VEGGIE PIE RECIPE
Please tell me I am not the only parent who struggles to feed her kiddos enough veggies.
We adapted the recipe with ingredients that we had in our house. We didn’t have any orange juice – I love how brilliant the color of our pie pieces was with the carrot and the beet juice. We followed the instructions over at the Imperial Sugar site for the process.
Feel free to adapt! You can create a variety of veggie “pies”. I bet Blueberry Spinach or Orange and Red Sweet Pepper would be yummy!

candy VEGGIE PIE ingredients
- 1/2 cup of carrot juice
- 1/4 cup of beet juice
- 1/2 cup of apple juice
- Juice from half a lemon
- 1 1/2 cups of Imperial Fine grain sugar
- 3 packets of unflavored gelatin
instructions to make CANDY VEGGIE PIE
Step 1
Fill the mold with gelatin syrup. To achieve the “pie piece” look, use silicone baking cups. Fill the cups an inch or so.
Step 2
Then place them into the fridge so the mixture would set faster.
Step 3
Pop them out to cut them into slices and eat them after a couple of hours.
Yum! Now your kids are enjoying a festive slice of pie, a piece of candy, and eating a portion of veggies – all at once!
This recipe made a TON of pies. I think we got about 8 full pies and close to fifty individual pieces. I’d love to find a way to incorporate more whole foods into the process if we do this again.
