pumpkin muffins for cheaters

A few weeks ago I was approached by the lovely folks at PAM No-Stick Cooking Spray to get involved in a series of posts involving PAM, cooking and some videos.   I am a big PAM fan and feel pretty confident about using PAM and doing videos…it is the cooking that causes me a little trouble around here.

Because if it isn’t easy, it doesn’t happen in my kitchen.

Then I thought about how hungry I was for pumpkin muffins.

{this is a reoccurring thought}

And how lazy I was feeling.

{another reoccurring thought}

And how I wish I had a pumpkin muffin mix, but all had was a Cinnamon Streusel muffin mix and a can of pumpkin.

Make it work!

I often substitute applesauce for oil and I figured that pumpkin should work as well.   I Googled it a bit and found that it wasn’t an outlandish idea and so I proceeded with my…

Pumpkin Muffin Mix Muffins from a Muffin Mix that doesn’t Contain Pumpkin

I took a Cinnamon Streusel muffin mix that required 3/4 cup of milk, 1/4 cup of oil and 2 eggs.

I did use the 2 eggs, but I cut the milk down to 1/2 cup and added a 1/2 cup of pumpkin in substitution for the oil and a portion of the milk.

pumpkin muffin ingredientsI was afraid if I JUST replaced the oil, the pumpkin taste wouldn’t be strong enough in the finished muffin.

I also gave the milk/pumpkin mixture a stir before I added it to the muffin mix.

The muffin tin was liberally sprayed with PAM and then the batter was dropped into the the glistening baking pan.

pumpkin muffins in the ovenAnd guess what?

They smelled like pumpkin muffins.

And after I popped them out of the pan {thanks PAM}, I found that they tasted like pumpkin muffins.

We had a little fun with PAM today…

PAM cooking sprayI am working with ConAgra Foods on behalf of PAM in celebration of their New & Improved Cooking Spray.   They were sweet to send me a PAM toolkit {stay tuned because I will soon be offering a similar gift as a giveaway}, PAM promotional items and compensation.

All the opinions and silliness are my own. You can find PAM on FB or follow along on Twitter with the #PAMPerfection hashtag.
