Pumpkin Muffin Mix Muffins from a Muffin Mix that doesn’t Contain Pumpkin

I took a Cinnamon Streusel muffin mix that required 3/4 cup of milk, 1/4 cup of oil and 2 eggs. I did use the 2 eggs, but I cut the milk down to 1/2 cup and added a 1/2 cup of pumpkin in substitution for the oil and a portion of the milk. pumpkin muffin ingredientsI was afraid if I JUST replaced the oil, the pumpkin taste wouldn’t be strong enough in the finished muffin. I also gave the milk/pumpkin mixture a stir before I added it to the muffin mix. They smelled like pumpkin muffins. And after I popped them out of the pan {thanks PAM}, I found that they tasted like pumpkin muffins. We had a little fun with PAM today…
