I am! Here is one of my kiddos’ favorite treats – pie crust cookies. I think it’s the easiest but the yummiest recipe to make for the season!

Let’s make an easy pie crust jam cookies

My oldest especially prefers the pie to the pie filling most of the time! This is super easy, basically, you just take the crust, thickly spread some jam onto it, fold the crust over onto itself so the jam is sandwiched, cut the crust into squares, sprinkle some sugar on top, and voila! You have some pie crust cookies! They taste a bit like flaky shortbread.

My Super Easy Pie Crust cookies Recipe ingredients

  • 1 and 1/4 cup of flour
  • 1 tablespoon of sugar
  • 1/4 teaspoon of salt
  • 1/4 cup of cooking oil
  • 1/4 cup of milk
  • 1 teaspoon (or splash) of vinegar

Step 1

Mix the dry ingredients. Add the wet ones till it is all moistened, you don’t want to over-mix them.

Step 2

Then either roll it out (use an old bottle or jar if a rolling pin isn’t handy) or press it into tart tins or whatever with your hands.
