Let’s make some Super Easy Potato Soup

I make this recipe all winter…it is super easy and it is potato soup (hence the name) and so yummy. It’s also comfort food, to warm you up on cold days! The creaminess and the flavorful combination of each ingredient with potatoes are just so perfect. Oh, enough with the story, let’s get to the recipe!

Easy Potato Soup recipe ingredients

  • Potatoes
  • Onions (1 onion:3 large potato ratio)
  • Salt
  • Pepper
  • Milk
  • Baked potato toppings

Steps in making Easy Potato Soup Recipe

Step 1

Peel the potatoes and cut them into pieces.

Step 2

Prepare the onions and chop. The pieces do not have to be small since you will be blending later.

Step 3

Put the potatoes and onions into a large pot and cover with water.

Cook them on the stove until all are tender.

Step 4

Cook on the stove until all are tender. You can’t really overcook at this point. It is very forgiving!

Potato Soup in Blender
Blend the onion-potato mixture in a food processor or blender.

Step 5

Blend the onion-potato mixture in a food processor or blender. Add milk or cream as needed to get the desired consistency.

Potatoe Soup Blended
Return the blended soup to the pot on low heat and season with salt and pepper to taste.

Step 6

Return the blended soup to the pot on low heat and season with salt and pepper to taste. You can add other spices at this point if you desire.

Step 7

Add additional milk or cream as needed for creaminess and consistency. I find if your potatoes are really, really soft it reduces the necessity for cream and ends up quite creamy.

Serve! I like to add a topping bar with bacon, shredded cheese, chives, sour cream, and anything else that tastes yummy on baked potatoes.

  7. Add additional milk or cream as needed for creaminess and consistency.
  8. Serve! Add a topping bar with bacon, shredded cheese, chives, sour cream, and anything else that tastes yummy on baked potatoes.

  1. We love blended veggie soups too. I’m too lazy to put the veggies into my blender. Have you ever tried a hand blender directly in the pot? So much easier! I also like to use chicken stock instead of water to steam the veggies. Can you tell we eat a lot of soup?

  2. You might try adding broccoli to it sometime. It is very yummy that way! Our potato soup is similar, but has cream of mushroom in it for broth and the potatoes are chunks. 🙂

  3. I made potato soup a few weeks ago and I always end up adding golden potatoes for about 20 minutes after I’m done blending and all. I like the chunky potato pieces in mine. =)

  4. I sooooo would’ve gone for this back in the day. I got an aversion to potato soup when I was preggo w/ the twins, and so far it STILL hasn’t lifted. Maybe one day….
