Delicious Loaded Breakfast Skillet with Tomato & Bacon – perfect for breakfast or breakfast for dinner, weekends or weekdays!
All the ingredients of a terrific, hearty meal in one pan —eggs, tomatoes, bacon and potatoes cooked to perfection.
Loaded Breakfast Skillet With Tomato & Bacon
Here’s what you need to make Loaded Breakfast Skillet with Tomatoes & Bacon:
- 3-4 eggs (depending on size, I used medium)
- 1/2 cup milk
- 4 strips of bacon, diced
- 1 small baked potato, diced
- small handful fresh baby spinach
- 1 small tomato, diced
- 1 cup shredded mozzarella cheese
- 4 soft flour tortillas
- pinch of salt & pepper
Preheat the oven to 425.
Heat skillet over medium, add bacon and cook for about 2-3 minutes.
Add the diced potato and continue cooking until bacon is crisp and potatoes have browned. Drain grease and add to a bowl, set aside.
Shut off burner.
Beat eggs and milk, add a pinch of salt & pepper. Pour a small amount into the skillet. Set one tortilla on top of the egg mixture, in the middle of the skillet. Top the tortilla with a sprinkle of cheese, tomato and some spinach.
Add another tortilla.
Continue to layer alternating cheese, potato with bacon, tomato with spinach and pouring a small amount of egg mixture on each layer.
Finish with a tortilla, bacon, potato and cheese. Pour the remaining egg mixture down over the top of the layers.
It will fill in around the edges.
Bake for 15 minutes or until egg is firm. The end result resembles a frittata, but in the middle is layers of soft tortilla with all kinds of deliciousness!
Slice like a pie and serve.
