Breakfast Skillet ingredients
Here’s what you’ll need to make this loaded breakfast skillet recipe.
- 3-4 eggs (depending on size, I used medium)
- 1/2 cup milk
- 4 strips of bacon, diced
- 1 small baked potato, diced
- small handful fresh baby spinach
- 1 small tomato, diced
- 1 cup shredded mozzarella cheese
- 4 soft flour tortillas
- pinch of salt & pepper
DIRECTIONS TO MAKE breakfast skillet with tomato and bacon RECIPE
Step 1
Preheat the oven to 425.
Step 2
Heat skillet over medium heat, add bacon, and cook for about 2-3 minutes.
Step 3
Add the diced potato and continue cooking until bacon is crisp and potatoes have browned.
Step 4
Drain grease and add to a bowl, set aside. Turn off the burner.
Step 5
In a separate medium bowl, beat eggs and milk, add a pinch of salt & pepper.
Step 6
Pour a small amount into the skillet.
Step 7
Set one tortilla on top of the egg mixture, in the middle of the skillet.
Step 8
Top the tortilla with a sprinkle of cheese, tomato, and some spinach.
Step 9
Add another tortilla.
Step 10
Continue to layer alternating cheese, potato with bacon, tomato with spinach, and pour a small amount of egg mixture on each layer.
Step 11
Finish with a tortilla, bacon, potato, and cheese. Pour the remaining egg mixture down over the top of the layers. It will fill in around the edges.
Step 12
Bake for 15 minutes or until the egg is firm.
Step 13
Slice like a pie and serve.
The end result resembles a frittata, but in the middle is layers of soft tortilla with all kinds of deliciousness!
