Kale is a true powerfood with 25 percent more vitamin A than spinach and higher levels of both vitamin C and calcium. Kale gives the smoothies a really bright and happy green color and, once frozen, becomes sorbet without all the sugar. We simply love making this yummy kale smoothie recipe! Here’s how to make our Kale and Berry Smoothie recipe:
Kale and Berry Smoothie Recipe
- 4 cups chopped kale (about 1/3 of a 1 pound bag)
- 1 cup water or juice
- 2 ripe bananas
- 1-2 cups frozen berries (we used frozen strawberries and blueberries)
First, fill your blender to the top with the chopped kale. Add the water and blend with the cover on while occasionally turning off the blender and tamping down the kale with a spoon. Blend until completely smooth.
Next, peel the bananas and break into large pieces. Add to the blender and blend with the lid on until smooth.
Now add your choice of frozen berries and blend, covered, until smooth again, about 1-2 minutes.
You can also freeze into popsicles. If you want to make a kid friendly sorbet, freeze it for 1-2 hours, till it just starts forming ice crystals. Stir and refreeze. Wait an hour or two and then stir again. At this point you can refreeze and it will stay soft. Our Kale sorbet is the perfect after dinner sugar free dessert for my dairy intolerant kids. Who needs veggies for supper when we can have them for dessert! Also check out The Local Cook for Kale Chips – they sound delicious!
