We eat breakfast for dinner around here frequently.

I am just a breakfast girl.

I think it might be genetic because the boys seem to favor the first meal of the day as well. The cool thing is that if you make extra for dinner, you can have the left-overs for breakfast the next day…see how this works out?

When I found this recipe for Fruity Yogurt Pancakes on the Bisquick website, I knew I had to try it.

I have made a few changes and doubled the original recipe because we like pancake leftovers.

Kinda Lemon Pancake Recipe ingredients

  • 4 cups Original Bisquick
  • 1 cup milk
  • 2 T sugar
  • 4 eggs
  • 2 containers of yogurt – I used one vanilla and one lemon…hence the kinda lemony flavor.
Lemon-flavored pancakes are so tasty.

Steps of making this kinda lemon pancake recipe

Step 1

Heat griddle. Grease as necessary.

Step 2

In a bowl, combine ingredients and stir (batter will be lumpy).

Step 3

Pour 1/4 cupfuls onto a hot griddle. Spread if needed. Add a little milk to the batter if too thick.

Step 4

Cook until golden brown.

I have the boys practicing arts, so, yeah.

Step 5

Clear your kitchen counter of all drying watercolor art masterpieces…

The lemon scent is just my favorite!

Step 6

Serve with your favorite pancake toppings. Enjoy!

How our kinda lemon pancake recipe turned out

During the dinner discussion tonight, the boys decided that the perfect day would be dad making pancakes for breakfast, eating at IHOP for lunch, and mom making waffles for dinner. Plus more lemon pancakes.

I would have to agree.

This fruity yogurt pancake recipe is just too good to resist! The good thing about this recipe is that you can use any fruit-flavored yogurt to match your tastebuds. If your kids love strawberries, go for strawberries! In this case, we just love lemon, so it's a kinda lemon pancake recipe.

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 4 cups Original Bisquick
  • 1 cup milk
  • 2 T sugar
  • 4 eggs
  • 2 containers of yogurt

Instructions

  1. Heat griddle and lightly grease with butter.
  2. Combine ingredients in a big bowl and stir (the batter should be lumpy). You may add a bit of milk if you think the batter is too thick.
  3. Pour 1/4 cupfuls onto the hot griddle. Spread as needed.
  4. Let the pancake cook until golden brown.
  5. Serve with your favorite pancake toppings and fruits. Enjoy!

    Notes

    I used one vanilla and one lemon yogurt flavor here…hence the kinda lemony flavor. But feel free to change the flavor depending on your preference.

    I also doubled this recipe because we love leftovers. You can half the recipe if your family just wants the normal amount of pancakes for dinner.

    1. This sounds so unhealthy for kids to be eating at night. You forget that you smother pancakes with syrup. They’d be bouncing off the walls before bed. Save it for breakfast but serve it with eggs (protein) to help when the sugar crash comes.

        I sent you a nice email thanking you for your suggestion, but your email address is fake. My point was that we don’t do this nightly…it is a treat and it is within a balanced menu otherwise. My boys go to bed very early so I am aware of the sugar crash and don’t want to have them laying in bed not able to sleep.
