This is a container of my grandmother’s famous beet jello.
Yes, beet jello does exist. Oh, and while we are talking in italics…why is Holly taking beet jello to Mom 2.0?
It all started on #gno a while back (December 22, 2009, to be exact)…
*insert wavy Scooby-Doo lines with the doodly-doo sound effects*
In the midst of a jello conversation (don’t you just love Twitter?), Rachael at @Todaysmama mentioned that she had a superior chunky jello recipe.
I replied with the following boast:

Was that a challenge?
Well, in a few hours Rachael will be on TEXAS soil and as a matter of Texas-chunky-jello-potluck-pride, I will be taking the game to her at Mom 2.0.
Yep, it is THAT serious.
So if you would like to play along at home (if you are at Mom 2.0, please stop by the jello suite…I will have extra spoons), have fun making this recipe!

Pineapple-Beet Salad Supreme Recipe ingredients
- 1 3 oz pkg. Strawberry Jello
- 1 3 oz pkg. Raspberry Jello
- 1 3 oz pkg. Cherry Jello
- 4 cups of boiling Water
- 1 can Shoestring-Style Beets
- 1 can Crushed Pineapple
- 1/2 cup Sweet Pickle Juice
Dressing Ingredients
- 1 cup mayo
- 1 3 oz pkg. cream cheese
- 1 TB dried celery
- 1 2 oz can of pimiento
- 1 TB sweet pickle
- 1 TB chopped green onion
directions to make Pineapple-Beet Salad Supreme Recipe
Step 1
Dissolve the jello in boiling water.
Step 2
Drain beets and pineapple.
Step 3
Add drained liquid and pickle juice to dissolved gelatin. Chill till syrupy.
Step 4
Stir in beets and pineapple.
Step 5
Pour into 3 qt. mold and chill until firm.
Step 6
Make the dressing: Combine the mayo, cream cheese, celery, pimiento, pickle, and onion. Thin with light cream to desired consistency. Let stand for several hours.
Step 7
Unmold jello and serve with dressing. Enjoy!
Pineapple-Beet Salad Supreme Recipe

This Pineapple-Beet Salad Supreme recipe is my pride. It tastes so good and is so fun to make. Let's go and dig in to this amazing Jello recipe!
Ingredients
- 1 3 oz pkg. Strawberry Jello
- 1 3 oz pkg. Raspberry Jello
- 1 3 oz pkg. Cherry Jello
- 4 cups of boiling Water

- Chill till syrupy.
- Stir in beets and pineapple.
- Combine the mayo, cream cheese, celery, pimento, pickle, and onion. Thin with light cream to desired consistency. Let stand for 1-2 hours.
- Unmold jello and serve with dressing.

I’m not sure that beats my grandma’s lime Jello with celery, pecans, and cottage cheese in it. (But it’s close!) I think I just threw up a little.
My husband loves pickled beets. I bet he’d love this jello. I’m just not so sure I can handle the pickle juice…
I do love Twitter, but I do NOT love beets. I just don’t know if I could handle this one. II won’t knock it ’till I try it, though.
