My grandma’s beet jello is ready to go to Utah.

This is a container of my grandmother’s famous beet jello.

Yes, beet jello does exist. Oh, and while we are talking in italics…why is Holly taking beet jello to Mom 2.0?

It all started on #gno a while back (December 22, 2009, to be exact)…

*insert wavy Scooby-Doo lines with the doodly-doo sound effects*

In the midst of a jello conversation (don’t you just love Twitter?),   Rachael at @Todaysmama mentioned that she had a superior chunky jello recipe.

I replied with the following boast:

Was that a challenge?

Well, in a few hours Rachael will be on TEXAS soil and as a matter of Texas-chunky-jello-potluck-pride, I will be taking the game to her at Mom 2.0.

Yep, it is THAT serious.

Here’s the famous pineapple-beet jello recipe!

So if you would like to play along at home (if you are at Mom 2.0, please stop by the jello suite…I will have extra spoons), have fun making this recipe!

Here’s what you’ll need to make this recipe!

Pineapple-Beet Salad Supreme Recipe ingredients

  • 1 3 oz pkg. Strawberry Jello
  • 1 3 oz pkg. Raspberry Jello
  • 1 3 oz pkg. Cherry Jello
  • 4 cups of boiling Water
  • 1 can Shoestring-Style Beets
  • 1 can Crushed Pineapple
  • 1/2 cup Sweet Pickle Juice

Dressing Ingredients

  • 1 cup mayo
  • 1 3 oz pkg. cream cheese
  • 1 TB dried celery
  • 1 2 oz can of pimiento
  • 1 TB sweet pickle
  • 1 TB chopped green onion

directions to make Pineapple-Beet Salad Supreme Recipe

Step 1

Dissolve the jello in boiling water.

Step 2

Drain beets and pineapple.

Step 3

Add drained liquid and pickle juice to dissolved gelatin. Chill till syrupy.

Stir in beets and pineapple.

Step 4

Stir in beets and pineapple.

Step 5

Pour into 3 qt. mold and chill until firm.

Step 6

Make the dressing: Combine the mayo, cream cheese, celery, pimiento, pickle, and onion. Thin with light cream to desired consistency. Let stand for several hours.

Step 7

Unmold jello and serve with dressing. Enjoy!

Yield: 18 servings

Ingredients

  • 1 3 oz pkg. Strawberry Jello
  • 1 3 oz pkg. Raspberry Jello
  • 1 3 oz pkg. Cherry Jello
  • 4 cups of boiling Water
  • 1 can Shoestring-Style Beets
  • 1 can Crushed Pineapple
  • 1/2 cup Sweet Pickle Juice

  1. Sorry ladies, Iowa jello has you both beat. I have a recipe here from my MIL that calls for cottage cheese, cool whip, miracle whip, green pepper, onion, celery, carrots, and horseradish in lemon jello. I use it to threaten my husband, and so far I haven’t had to make it. He just whimpers and acquiesces. 🙂

  3. DUDE. I don’t think I’ve ever loved someone this much from a distance. period. I’ll be up late tonight packing . . . and compiling my recipes for jello greatness. However, I bow to you. I don’t think I can beat BEETS AND PICKLE JUICE!?!?!?!?! This is going to be the experience of a lifetime!

  4. That jello kind of scares me! But I’m a New York girl so maybe you have to be born to the South to truly get the jello thing! I will say wow- someone was being really inventive when they thought that recipe up!
