Before I bought an Air Fryer, I used to pan fry my diced potatoes and can I tell you the oil splatters and grease burns I suffered for this tasty treat?! {OW} Not only is it less dangerous to cook in my Air Fryer, I love that my favorite foods actually become healthier when prepared this way!

So it is a win-win situation to have a healthier meal that tastes better and only takes a few minutes to make. What I love about this recipe is it makes cooking diced potatoes not only easier, but tastier.

If you don’t have any fresh potatoes on hand, you can try using frozen potatoes.

Diced Potatoes in Air Fryer Ingredients

  • 2 cups russet potatoes, cleaned and diced
  • 1 tablespoons of olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon dried parsley
  • 1 teaspoon seasoned salt
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper

For an easy way to cut potatoes, slice them in half length-wise and then place the flat side facing down on the cutting board to then be diced.

Cube potatoes and add to medium bowl.

It is your decision whether you want the potato peels on or off. We like the rustic woody taste of the potato skins and show this air fryer cubed potato recipe with the potato skins on, but this recipe turns out great with the skins off too!

Do you have to boil a potato before frying it?

No, we are using raw potatoes in this recipe out of convenience, but if you already have boiled potatoes you can still follow these steps with the exception of your cooking time in the air fryer will be cut in half.

Can you air fry frozen diced potatoes?

Yes, you do not have to defrost frozen diced potatoes before adding them to your air fryer. Depending on the size of the diced potato pieces, the average time to cook a frozen diced potato is 20 minutes in the air fryer flipping the potato pieces mid way through the cooking process.

Do you have to soak potatoes before air frying?

No. It is easier to skip that step and unnecessary for this recipe. Enjoy!

What I Love About These Crispy Air Fryer Diced Potatoes

It really does come down to how crispy the diced potatoes can easily get without overcooking them or burning them easily! I am always surprised at how quickly things cook in the air fryer. It seems almost magical. Because we are trying to eat healthier whenever we can, using the air fryer is a great solution.

My kids really love this diced potato recipe and ask for it all the time! We use it for dinners, but also make the dices a little smaller and make almost hash browns like potatoes for breakfast.

Are Air Fryer Diced Potatoes Gluten Free?

Yes! One of the hardest parts of living gluten free has been the realization that most restaurant potatoes are not safe–especially when a deep fryer is involved.  Some restaurants have dedicated gluten free fryers, but many do not. Cooking my favorite potato recipes at home is the only way to guarantee zero cross-contamination.
