Today we made pumpkin chocolate chip cookies. Yes, you read that right. PUMPKIN chocolate chip cookies. Who would have thought you could turn pumpkins into cookies, right?
Well, guess what? They turned out amazing! I love making this healthy treat for Halloween, or any time of the year!

What you need to make Pumpkin Chocolate Chip Cookies:
- 1 Cup canned or fresh pumpkin
- 1 Cup white sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 Cup vegetable oil
- 1 T vanilla extract
- 1 egg
- 2 Cups chocolate chips
- 2 Cups flour
- 2 tsp. ground cinnamon
- *you may add walnuts if you like.
How To Make pumpkin Chocolate Chip Cookies
Step 1
Combine pumpkin, sugar, oil, and egg.
Step 2
In another bowl, stir flour, baking powder, ground cinnamon, and salt.
Step 3
Add flour mixture to pumpkin mixture and mix well.
Step 4
Add vanilla and chips. (Add nuts here if you desire)
Step 5
Drop by spoonful on a greased cookie sheet and bake at 350F for approximately 10 minutes or until lightly brown and firm.
Step 6
Let the cookies cool down first before gobbling them up! Enjoy!

Ingredients

Instructions
- In a bowl, combine pumpkin, sugar, oil, and egg.
- In another bowl, stir flour, baking powder, ground cinnamon, and salt.
- Combine the flour mixture and the pumpkin mixture and mix well.
- Add vanilla and chocolate chips. (Add nuts here if you like.)
- Scoop the cookie dough and put it onto a greased cookie sheet and bake at 350F for approximately 10 minutes or until lightly brown and firm.
- Serve when the cookies are cooled down, with a glass of warm milk!
