Super Easy Freezer-Friendly Pesto Recipe

We are loving this delicious pesto recipe and you will, too. You can use it in so many recipes; salads, sandwiches, pasta… it’s endless! Here is a simple freezer-friendly pesto you can make so you always have some on hand.


Basic Pesto for Freezing
  • 2 cups fresh basil leaves, packed
  • 1/3 cup extra virgin olive oil
  • 1/4 cup pine nuts or walnuts
  • 2 – 3 garlic cloves, peeled
  • Salt and freshly ground black pepper to taste
Put everything in a food processor and pulse until you get the consistency you want. It will make one half pint.
Val packed hers in half pint mason jars (leaving 1/2 inch head space) then froze.   I filled a few ice cube trays up with mine, froze them and then popped the cubes into a zip-lock bag for long term storage in the freezer.   As I had more than I could fit into my trays, I filled a few baby-food jars with the remaining pesto and froze.   I love adapting recipes and added a handful of spinach and a handful of Parmesan cheese to the batch of pesto that I made.
