Making pancakes from scratch is actually super easy, and they can be made with ingredients you already have in the pantry.  We are going to show you how to make pancake mix…and it is simple! This is such a great and easy pancake recipe.

If you are adding frozen blueberries or frozen strawberries to your mix, be aware that they might bleed as they cook. Defrost frozen berries on your counter, before cooking, to avoid this.

Make sure you have all of the required pancake mix ingredients before you get started!

Add your dry ingredient homemade pancake mix to large measuring cup or mixing bowl. You may have made it ahead of time so you can just pour it into a large bowl or you can make it as part of the pancake mix recipe.

If you make your dry pancake mix ahead of time, it really is no different prep time wise than if you were using a boxed mix! If only it was always this easy to cook from scratch…

Step 2

Next, add wet ingredients and whisk until well combined into a thick batter with a few small lumps. Let the batter rest…

Step 3

Heat griddle to medium-high heat and spray with cooking spray.

I love our electric griddle because it seems to always be the right temperature, but this works well in a frying pan or cast iron skillet too.

Have your kids help set up a “pancake bar” with berries, chocolate chips, flavored syrups, and all of your family’s favorite pancake toppings.

Step 4

Next, scoop pancake batter onto hot griddle and cook 4-5 minutes or until golden brown on the first side.

Step 5

Flip and cook on other side 2-3 minutes or until golden brown.

Step 6

Continue the process with the remaining batter until all your perfect pancakes are ready to eat.

Step 7

Serve the warm buttermilk pancakes immediately with butter, real maple syrup or fresh fruit. At my house, this list of favorite toppings would include peanut butter and chocolate chips too!

Suggested Variations for Making Pancake Recipe

  • You can also use melted butter instead of canola oil as well. Or you can also use vegetable oil or coconut oil.
  • A splash of a little vanilla extract when you add the wet ingredients to the dry mix will give to give your pancakes more flavor.
  • Want perfectly golden pancakes? Let your large skillet heat up on medium heat or low heat for a couple minutes, and drop a little batter on it. If it cooks through, it is ready to make delicious pancakes.
  • Want to add whole wheat flour? Mix 1/2 whole wheat flour and 1/2 all-purpose flour together as substitute in your own pancake mix. The resulting pancakes won’t be quite as fluffy, but taste delicious.
  • Buttermilk pancakes are the best fluffy pancakes. I know we said you could add either milk or buttermilk, but using buttermilk makes the best easy homemade pancakes!
  • Olive oil as a substitute for vegetable oil and/or cooking spray. You can use olive oil instead of the other oils in this classic pancake recipe, but it will change the flavor just a bit.

Store pancake mix in pantry for up to 1 month in an airtight container at room temperature or in the fridge.

Leftover Pancake Storage

In the unlikely event that you have leftovers from the best pancake recipe {giggle}, then let the pancakes cool before placing them in a ziplock bag and storing the flat pancakes in the refrigerator for up to 48 hours.

Vegan pancakes are easy to make, if you just substitute a few ingredients.

How to Make Vegan Pancakes

If you are on a vegan diet, or are cooking for someone who is, no worries! This recipe can be tailored to be egg-free and dairy-free, too! 

  • Make Egg-Free Pancakes: Replace the eggs with a mixture of 1/4 of unsweetened applesauce and 1/2 teaspoon of baking powder. This constitutes 1 “egg”.  You can also make an egg replacement out of flaxseed meal, by mixing 1 tablespoon of ground flaxseed (flaxseed meal), wit three tablespoons of water. Then, let it sit in your refrigerator to thicken, for 15-30 minutes before using it. 
  • Make Dairy-Free Pancakes: Replace milk with your favorite non-dairy milk, like almond milk, coconut milk, soy milk, oat milk, or hemp milk. I have also made this recipe with water instead of milk, and still wound up with really fluffy pancakes!

How to Make Gluten-Free Pancakes from Scratch

This is the easiest substitution you will find!

  • Gluten-Free Pancake Recipe Mix: Use a gluten free all-purpose flour.
  • I prefer King Arthur Gluten-Free Flour, but there are many good ones to choose from!
  • Make sure your baking powder is gluten free, too.

During the holidays, this recipe even makes a great gift idea solving a loved ones’ hectic mornings. Package a couple of jars of dry homemade pancake mix inside a cute mixing bowl along with a measuring cup, a whisk, a spatula, flavored syrups, and chocolate chips.

How To Store LEftover Pancakes

If you make a big batch of pancakes using this homemade pancake mix recipe you may have some leftovers. You can store them in the fridge using a Ziploc baggie or an airtight container.

You can also put them in the freezer! Pancakes freeze well, hold their nutrition, and microwave well or you can put them in the toaster oven! You just need to microwave them about 20 seconds or heat them at 350 for about 8 minutes in the toaster oven (total time will vary on thickness and size of pancakes). But keep an eye on them.

  • ½ teaspoon salt
  • Wet Ingredients:
  • 1 egg
  • ¾ cup milk or buttermilk
  • 2 tablespoon vegetable or canola oil

Instructions

Pancake Mix:

  1. In a medium bowl, combine all ingredients until well combined.
  2. Store in airtight container or jar with lid

To Make Pancakes:

  1. Add mix to large measuring cup or mixing bowl.
  2. Add wet ingredients and whisk until well combined.
  3. Heat griddle and spray with cooking spray.

How Do I Know When I Should Flip The Pancake?

Once you pour the batter on your hot pan, you will wait. You will see the edges begin to cook and and large bubbles will form on the batter. That’s when you will flip your pancake.

What Do I Do If My Pancake Batter Gets Too Thick?

While you cook pancakes there is a chance your batter will thicken up as it sits. You can give it a good stir and give it a splash of liquid if need be (like milk), but don’t add too much. You want your pancakes to be fluffy.

Can I Use This Homemade Pancake Mix In The Oven?

Yes, you can use this homemade pancake mix recipe in the oven. Grease a baking sheet with cooking spray, preheat your oven at 425. Mix your homemade pancake mix like you would regular pancakes and then pour it in a single layer on your pan and spread evenly. Add your favorite toppings like bananas, strawberries, chocolate chips, etc. Then bake for 15-17 minutes until your pancakes are golden brown. Let cool and serve!

My family honestly prefers the taste and thickness of the pancakes made from this homemade pancake mix over the store-bought mix (which is great because I have tweaked this recipe to make a gluten free pancake mix and it’s way cheaper than the gluten free pancake box mixes in the store!).
