Who cares if the chicken or the egg came first when they are transformed into something as cute as these Spring Chick Breakfast Sandwiches? Each little egg sandwich is decorated using cheese and black olives to look like a fuzzy baby chick and would be fun to serve on a bright and sunny spring morning.
Each of these sandwiches not only is made with eggs but the chicks are egg shaped too. I piled turkey, cheddar cheese and egg onto wheat toast to make my spring chicks, but you can use whatever your kids like to eat in the morning.
Ingredients (as I made these 3 sandwiches):
1 teaspoon butter
salt and pepper, to season eggs
optional: 1 tablespoon heavy whipping cream
3 slices wheat bread, toasted
1-3 slices deli turkey
3 slices of cheddar cheese
1 black olive or a few slices
egg shaped cookie cutter
tiny flower shaped cutter (or use kitchen scissors or a knife)
small round plunger cutter (or use kitchen scissors or a knife)
Heat butter in non-stick pan over medium high heat. Whisk eggs with salt, pepper, and heavy whipping cream, if using. Pour into hot pan. Stir for 30 seconds. Turn heat down to low and continue to cook eggs keeping them together like an omelet. flipping them over midway through.
Cut eggs, toast, turkey and cheese using the egg shaped cookie cutter. Cut small eyes out of the olives, orange beaks out of the cheese, and flower shaped feet also out of the cheese.
Set an egg shaped slice of turkey on top of the toast. Layer on the cheese then egg. Add two olive eyes, 1 cheese beak and 1 cheese feet to each spring chick breakfast sandwich. Serve immediately.
How fun would these breakfast sandwiches be served alongside some Mini Cheese Ball Chicks? I bet your kids would love them.
